The Real Math of Liquor Profit — Calculate What Each Cocktail Actually Costs

A cocktail can be one of your menu's best sellers and still be underperforming financially. The secret is understanding the difference between what customers pay and what each drink actually costs you to make.

Let's break down the math.

Calculate the liquor cost per drink

Suppose a bottle contains 25.4 fluid ounces and costs your business $30. The liquor cost per ounce is approximately:
$30÷25.4=$1.18

If your documented recipe uses 1.25 ounces of that spirit, its liquor cost is approximately:
1.5×$1.18=$1.77If the cocktail sells for $12, liquor alone represents about 12.3% of its selling price.

That is not the full cost of the drink. Mixers, garnishes, ice, labor, breakage, and other operating expenses also matter.

What happens when the pour is inconsistent?

If a recipe calls for 1.25 ounces but the actual pour is 1.5 ounces, the spirit cost rises to approximately $1.78. That's about 30 cents more per drink in this example.

Across 1,000 drinks, that difference becomes approximately $300 in additional liquor cost, assuming the same bottle price and extra pour on every drink.

Build a more reliable pricing process

  1. Cost every cocktail using actual purchase costs and recipe quantities.

  2. Standardize the preparation method so the recipe is repeatable.

  3. Track ingredient price changes and update costing sheets.

  4. Review sales mix, not just individual drink margins.

  5. Compare expected liquor usage with actual inventory movement.

Put measurement to work

Utah'sliquor dispensing requirements make equipment selection especially important. For primary liquor in mixed drinks, covered licensees must use approved calibrated, metered dispensing systems. Your cocktail-costing process should reflect the quantities the approved system is configured to dispense.

The bottom line

Good cocktail pricing begins with good numbers. Once you know the actual cost of a drink, you can make smarter menu decisions without relying on guesswork.
